As a mom of 4 kiddos I spend alot of my time in the kitchen! And the biggest problem with that is that I DO NOT like to cook! Meal preparation and mealtime was always very frustrating for me. Everything from making a grocery list, to going grocery shopping, to fixing the meals. It wasn't until I started thinking about what was making it so frustrating that I had a lightbulb moment. I was doing very little, if any advance planning. I was constantly looking to see what I had on hand and then trying to plan the meal around that. So I decided to start planning a menu for the week, and it seriously revolutionalized my kitchen woes!! I recently decided to start this blog as a resource for other moms (or dads..or anyone who wants quick meal ideas) and update it with my monthly menu as well as recipies of quick family friendly meals. Taco Pie

This recipe was given to me by my sister-in-law, Dana. It was an instant hit and the best part is it is super quick and easy and is inexpensive!! For our family of 6 (5 who eat) one pie is just barely enough...so if you have big eaters, you may want to fix 2 or add another side dish!


Taco Pie

1 tube refrigerated cresent rolls (I use reduced fat)
1 pound hamburger, browned and drained
1 taco seasoning packet
1 1/2 cup Taco flavored Doritos crushed (you can use any flavor, but these taste best)
1 cup Sour Cream (I use light)
1 cup shredded cheese (I use mexican blend or cheddar)
shredded lettuce, black olives, tomatos, onions, taco sauce (any thing you use to top tacos)

Add the taco seasoning packet to browned and drained beef and prepare according to packet instructions, simmer for 5 minutes.

Unroll cresent rolls and press them into the bottom of a pie plate to form a crust. Spread 1 cup of the crushed chips into the bottom of the pie crust, top with taco meat (I scoop it out of the pan with a slotted spoon to minimize the "juice" and grease that gets into the pie). Then spread the sour cream over the meat, top with shredded cheese, then remaining crushed chips. Bake at 350 for 25 minutes (chips will be slightly browned). Then serve with all the toppings listed above!
